Mushroom Quiche That is as Tasty as it Looks

Continuing my quiche obsession and newfound love affair with dough, I figured it was time to level up my game with some quiches that are not just delicious, but also pretty enough to show off.


After savoring the sweet potato and red onion quiche, my taste buds started demanding something a bit more savory, but still with that perfect crunch. Naturally, it was only a matter of time before mushrooms - one of my all-time favorite veggies - took center stage.


So, in this recipe, I’m diving into my first-ever mushroom quiche! The dough has a little twist, but the basics are still the same.

What you need:

The Dough

  • 160g butter

  • 2 cups white flour

  • Pinch of salt

  • 1 large egg

  • 2 tbsp cold water


The Mushroom Filling

  • 150g champignon mushrooms

  • 150g portobello mushrooms

  • 150g shiitake mushrooms

  • 3 tbsp olive oil

  • 1/2 bunch chives

  • 1/2 tsp ground nutmeg

  • 1 tsp sweet paprika

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 2 crushed garlic cloves

  • 2 tbsp chopped thyme


The Royal

  • 3 large eggs

  • 160 ml cooking cream (38%) - I use 'nata líquida para montar'

  • 100 ml sour cream (9% fat) - I use greek yogurt

  • 1/2 tsp ground nutmeg

  • 1 tsp sweet paprika

  • 1/4 tsp salt

  • 1/4 tsp ground black pepper


For Decoration

  • 2-4 medium-sized mushrooms - 50g

What to do:

The Dough

  1. Mix butter, flour, and salt in a food processor until crumbly. Add egg and cold water, and process until dough forms.

  2. Roll out the dough and place it in a tart molde. Pierce with a fork, and freeze until filling is ready.

The Mushroom Filling:

  1. Slice the mushrooms and sauté in olive oil until golden.

  2. Season with chives, nutmeg, paprika, salt, pepper, garlic, and thyme. Cool and drain excess liquid.

The Royal Mixture:

  1. Whisk together eggs, cooking cream, sour cream, nutmeg, paprika, salt, and pepper.

Assembly:

  1. Preheat oven to 170°C.

  2. Spread the mushroom filling over the dough, pour royal mixture on top, and decorate with sliced mushrooms.

  3. Bake for about 40 minutes until golden.

  4. Enjoy your perfect mushroom quiche!
