Easy Fried Zucchini Patties

I haven’t written in a few weeks—truthfully, I just wasn’t in the mood to cook. I felt uninspired and didn’t even put much effort into making healthy, happy meals for myself. Between the gloomy weather and my kids’ winter illnesses, I barely found the time to take care of myself.
But in the past few days, something shifted. I started craving home-cooked meals again—something delicious, nourishing, and made by me. And with that, I found myself looking for inspiration.
Today, I had the unexpected gift of a sick daughter at home. It meant canceling plans and staying in with her, which made me think—maybe the universe was giving me the nudge I needed to slow down and make time for myself, too.
And so, I bring you these Zucchini Patties!
They’re a fun, tasty snack—perfect on their own but also great with a yogurt-based dip (though I just ate them straight up).

The Recipe inspired by the blog ¨foodsdictionary¨
What you need:
500g zucchini
1 large onion
3 cloves crushed garlic (I used the dry powder when I don't have at home fresh garlic)
3 tbsp chopped dill (I use the dried herbs when again, I forget to buy fresh)
2 large eggs
3 level tbsp flour
¼ tsp salt
¼ tsp black pepper
2 tbsp olive oil [for frying, as needed]

What you do:
Grate the zucchini and squeeze out excess liquid.
Finely chop the onion and mix it with the zucchini.
Add the crushed garlic, chopped dill, eggs, flour, salt, and a dash of black pepper. Mix well.
Form into flat patties and pan-fry on both sides until golden brown. Each patty should get a light coating of olive oil.
If the patties turn out too soft, add another tbsp of flour, or even try adding bread crumbs or oatmeal, to stabilize the batter.
