Spelt Flour

Spelt is a type of wheat that has gained popularity among health food enthusiasts.
While it contains gluten, its unique composition makes it easier to digest. Spelt also has higher protein and mineral content compared to regular wheat flour. Its downside is that it tends to rise less than typical wheat flour, but it provides a lighter texture in baked goods.
Many times I change half the amount of the regular flour with spelt flour, to make it a little healthier.. It doesn't change the test so feel free to experiment.
